Istrian ombolo has many names, but is commonly known as žlomprt in Istria. This typical Istrian specialty is a top gastronomic delicacy and is a trademark of Istrian cuisine.
So what is Ombolo? Ombolo is pure pork chop meat served after being wind dried. The meat is separated from the bone in one piece and rubbed with salt, ground pepper and finely crumbled laurel leaves. After seasoning, it is wind dried for about 3 weeks if it is to be served grilled, or 90 days if it is served in dried thin slices or simply sautéed with olive oil.
Ombolo is usually served with cabbage and homemade sausage. This meat-packed speciality meal is a classic of Istrian cuisine found in virtually any restaurant and country-style trattoria/ Istrian konobas.
